Welcome to Origin Estate

My name is Damian Bahr, and my family and I own this small pasture-raised poultry farm in Dexter, Kentucky.

I started raising chickens because it's what I feed my family. We couldn't find a source we fully trusted or understood, so we decided to raise them ourselves. Over time, what began for our own table gradually became something we now share with friends, neighbors, and others who find their way to our farm.

We started Origin Estate with a simple idea: every step matters, and every step deserves our full attention.

Producing chicken begins long before the birds ever reach our farm. We've intentionally built our operation around people we know and trust. Our chicks come from a family-owned hatchery in Pembroke, Kentucky. We pick them up only a few hours after being hatched.

During their first three weeks, they are housed in a warm brooder on a carefully managed bed of wood mulch that is routinely mixed and churned between flocks before eventually being returned to our pastures and gardens. During this time, we hand-mix the starter feed based on a custom recipe formulated by a nutritionist at Fertrell using certified organic, non-GMO ingredients including corn, locally roasted soybeans, small grains, and Fertrell minerals sourced through our local feed mill in Guthrie, Kentucky.

After three weeks in the brooder, the birds move out to pasture, where they are rotated to new ground every day, giving them continual access to clean forage, insects, and fresh pasture.

When they reach processing age, they are taken to a USDA-inspected processor in Pembroke, Kentucky, where they are air-chilled rather than immersed in a chlorinated water bath before being blast-frozen to preserve their natural flavor, texture, and freshness.

We've intentionally kept our supply chain close enough that we know the people behind every step. Remaining personally involved from hatch to harvest allows us to maintain a level of care, accountability, and consistency that isn't possible in a conventional supply chain.

The result is chicken with a genuine sense of place—whose flavor speaks for itself.
